Skinny fries are narrow-cut potato fries, usually around 5 to 7 mm wide, fried until crisp and golden. They are lighter and faster-cooking than thick chips.

Why make it

Make skinny fries when you want crunch, speed and a classic burger-bar side. They are perfect with dips and sandwiches because they stay light, crisp and snackable.

Step-by-step

  1. Step 1

    Cut the potatoes into even 6 mm fries and rinse under cold water until the water runs clearer.

    Look for: The fries are thin and even. Tip: A mandoline or chip cutter helps. Avoid: Uneven fries burn before thicker pieces cook.
  2. Step 2

    Soak in cold water for at least 20 minutes, then drain very well.

    Look for: The water looks cloudy from released starch. Tip: Longer soaking is fine if refrigerated. Avoid: Skipping the soak can make fries stick together.
  3. Step 3

    Spread on towels and dry thoroughly.

    Look for: The surfaces feel dry, not slick. Tip: Dry in batches if needed. Avoid: Water hitting hot oil spits and lowers the temperature.
  4. Step 4

    Fry at 150°C for 3–4 minutes until flexible and pale. Drain on a rack.

    Look for: The fries are cooked but not browned. Tip: Work in small batches. Avoid: Browning on the first fry makes them tough.
  5. Step 5

    Increase oil to 190°C and fry again for 2–3 minutes until golden and crisp.

    Look for: The fries are golden with crisp tips. Tip: Let the oil recover between batches. Avoid: Crowding drops the oil temperature.

    Season immediately while hot and serve at once.

    Look for: Salt clings to the hot surface. Tip: Serve in a wide bowl, not a covered dish. Avoid: Waiting too long makes fries limp.
